A Guatemala turned So-Cal Native, Julio was first introduced to the culinary arts of a fine French Restaurant at an early age. It was then that he realized he had a love for food and service, inspired by his family, which held prestigious positions within the hospitality industry.
Julio quickly learned that his passion and career was to behind the stove, and he quickly worked his way up to the ranks in some of Los Angeles’ most prestigious and exclusive Private Clubs and Hotels, the most prominent being Jonathan Club of Santa Monica, where he spent most of his time honing his skills under the tutelage of Chef Cecilie Andersson. He later became Chef de Partie at the Hotel Palomar of Westwood, and furthermore went on to join forces with executive Chef Dezy Bocheatre of Le Merigot Hotel in Santa Monica. During his tenure at Le Merigot, they were awarded AAA’s prestigious 5 Diamond award.
Today, Julio continues to work with a great deal of energy and has an absolute love for his profession, passion and attention to quality food and standards.
